A family of beer nerds

We wouldn’t get to live our dream without your constant support and love of beer. When we created Third Nature Brewing we not only wanted to give you great seasonal and ever changing beer but we also wanted to give you a destination. Our taproom was built with families in mind and the idea for you to come and hangout with us for a few hours, stick around for a bonfire and chow down on some good food.

Troy Zitzelsberger

Brewmaster, Co-Founder

Troy Zitzelsberger (Co-Founder and Head Brewer) is the brewing expertise to our “founding fathers” team. He’s a Certified Cicerone® and certified beer judge and has been brewing beer since his college days. His model/acting and free spirit personality has taken him to Chicago and New York to Thailand and most recently South Korea. He has honed his craft and recipes for the past 7 years in South Korea where he owned Hop Mori Brewing Company and met his wife Donghee. The dream, and now reality, was for him to move back to Michigan and start this family brewing venture!

If he isn’t in the brewhouse you will likely catch him outside, going for a run, doing yoga with his wife or checking out a new brewery. Want to buy him a beer? He doesn’t play favorites, just give him something he hasn’t tried before (it may be harder to do than you think)!

Brian Walker

General Manager

Originally from the tropical island of Oahu in Hawaii, Brian has worked for breweries in Honolulu, San Diego, and Chicago.  Recipient of awards from GABF, GLINTCAP, and U.S. Open Cider Championship for Cider and Beer making, his expertise combines with more than 15years of Hospitality and Quality Management Training.

Brian is known for being an avid Extreme Sports Enthusiast. Surfing for Team Kona Brewing during the 2017 Duke’s Ocean Fest, snowboarding Mammoth Mountain or his new local hill at Canonsburg, or Kayaking down one of Michigan’s hundreds of rivers, Brian brings his enthusiasm for ‘getting stoked’ to ‘stoking out the guest’ at every corner of service.

JoJo Zant

Head Chef

2022 GRand Taco Award Winning Chef JoJo has been an innovator of the culinary game in the Midwest for over 20 years. Starting in his Mom’s kitchen growing up in the Muskegon/Grand Haven area, JoJo learned the value of hard work at a young age. With a Culinary Degree from Baker College, working for large restaurant groups, high-volume sports bars, and exquisite fine-dining establishments, Chef JoJo has brought unique, innovative, and approachable cuisine from Chicago to West Michigan. We can’t wait to see what’s cooking!

Chef JoJo, along with his wife (Cammie) and dog (Zobi), love going for walks and checking out local restaurants. Always “Flying the W” for his love of the Chicago Cubs, JoJo spends his downtime watching sports (Go 49ers), playing golf, and cooking amazing meals for his family. He brings the same enthusiasm and curiousness to the kitchen at home as he does at work, and we are excited to see what’s next. Cheers to good food!
